Anything that came out of the Fortune "garage" studio (originally with a dirt floor) on Third Avenue in Detroit would fit this description, for sure. One-track recording, and the Browns didn't go for too many takes, either.

Herb Alpert's the Lonely Bull was recorded in his garage.
The others were done at Gold Star.
Tone Loc's Wild Thing was done on a 4 teack Ampex in his bedroom.
The basic track to Sexual Healing was recorded in a closet in Belgiumwith the drums from a Roland 808 and finished in a "pro" studio.
Karate by the Emporors and Some kind of wonderful by the Soul Brothers Six as well as most of Ronnie Walkers early stuff were recorded in a crude basement studio under a shoe store.

The late Richie Rivera was a club DJ during the disco era and a dear colleague of mine until his untimely passing in 1994.
Richie mixed Anita Ward's "Ring My Bell" for the master. He used no reverb, compression or effects - what was cut in the studio is what we heard on record.

"96 Tears" by ? and the Mysterians has got to be the standard by which all subsequent garage bands and one-hit-wonder songs must be measured That "three finger" organ riff is so basic that even I can play it. What a classic! But, I gotta give it up to The Ramones ("I Wanna be Sedated") though as the quintessential garage band-turned-rock stars.

How about recordings from the 1950s and 1960s that were not recorded in a traditional studio.
The Del-Vikings' "Come Go With Me" was recorded in a hotel room in Pittsburgh.
Jan & Arnie (later Jan & Dean) recorded "Jennie Lee" in Jan Berry's garage, bouncing vocals and instruments from one tape machine to another.
Doris Troy's "Just One Look" was a demo that was so professionally produced Atlantic released the tune as-is.
An entire Ray Charles live album was recorded by DJ Zenas Sears with one microphone(!) and sounded good enough for Atlantic to release without EQ'ing.
Finally, the Edwin Hawkins Singers cut "Oh Happy Day" and the entire album "Let Us Go Into The House Of The Lord" directly to a two-track reel to reel machine (and in stereo, too!)inside the church they attended in Northern California.

Speaking of choirs overcoming shortfalls in recording techniques...
The Reverend James Cleveland & His Angelic Choir recorded "Peace Be Still" in Cleveland's church for Savoy Records. When the choir sang the bridge they were so loud the 45 sounded like it was cut and EQ'ed at Hitsville! Talk about shaking the rafters!
Yet, I won't even bother buying a remastered CD version of this tune - I want to feel the room shake when the choir sings!

In the still of the night by the Five satins was recorded in a church basement in New Haven on an inexpensive mono machine.
American Sound in memphis had egg carton sound absorbers everywhere.
I recorded there several times.
Every little bit hurts was recorded on top of Armin steiners garage in L.A.
Pillow Talk was a demo made for Al Green and after it was rejected...well..you know the rest.

My one and only J J Cale album is "Okie" from around 1972.I remember reading/hearing that a number of tracks were literally 'backporch' recordings with minimal additional instrumentation.Believe this would fall into the category of 'garage to charts' - certainly with the main,but minor hit,'Cajun Moon'.

I love the sound of the room on the Soul Brothers Six "Some Kind of Wonderful" -- that drummer is a madman. To me it sounds like a great party I wish I'd gone to ...basement or otherwise.

I'm guessing differently, but I swear it sounds like "Money" by Barret Strong was done all in one room at one time (I'm talkin' Barrett, background singers, musicians, EVERYBODY in one room, one take, one big ol' jam session), and someone had one of those little handheld tape recorders and just held it out and recorded the song.

Todd Rundgren recorded his now-classic album "Something/Anything" on a multi-track machine in his attic. The single "Hello It's Me" came from those sessions.

In reverse? In 76 or 77, Paul McCartney produced a Denny Laine album of Buddy Holly songs. The pair of them recorded the songs on four-track in a shed in a remote part of Scotland, and mixed the whole caboodle down to straight mono. When EMI in London received the master tapes, they were so horrified that anyone would record in mono in the hi-tech seventies, that they released the album in "electronically reprocessed stereo" - rather defeating the object of the exercise!

Up to buying the Castle Music Re-Masters of Todd's early classics a coupla years ago , I would have fully agreed with your observation. Even the Album cover gives rise to that belief. On reading the Re-Issue Notes and Credits,it seems he certainly played every instrument and sang every vocal on Sides 1-3 , but this was mainly done in professional studios - with major,then-state of the art production 'tweaking'
The 4th Side was closest to the spirit of this Thread whereby it was recorded 'live' with NO overdubs BUT also over 3 different Studios in NY and LA -- not in a virtual 'one-take' , as I had always thought.
'Hello,It's Me' must be one of the few USA Top Ten singles to feature a vocal 'fluff' midway through and still be absolutely awesome (maybe because of its' humanity,I guess).
I though about sticking Todd here and decided against......but am now appearing like a Todd-Obsessive....sorry......I'm going to lie down now.
